Cryin for Kielbasa & Pepper Tortellini!

Ingredients

  • 3 Tablespoons Cryin Over Cayenne Dip Mix
  • 2 packages of kielbasa (or any sausage)
  • 3 bell peppers, sliced
  • Olive Oil
  • 19 oz bag of fresh tortellini (frozen works too)
  • Italian dressing
  • Parmesan cheese
  • Salt (to taste)

Instructions

  1. Wash, slice, and season your bell peppers with a drizzle of olive oil and 3 tablespoons of Cryin Over Cayenne dip mix. You can also add a pinch of salt to taste.
  2. Heat a griddle over medium-high heat. Add a little bit of oil to the griddle with the sliced kielbasa, and peppers.
  3. Once the kielbasa, and peppers are cooked how you like them add one bag of fresh tortellini to the other side of the griddle. Pour about 1/2 cup of water over the tortellini and cover with a griddle dome. Let cook until the tortellini is tender. After about 4 minutes, add more water if needed to help them cook.
  4. Stir together the tortellini, peppers, and kielbasa. Add a handful of parmesan cheese and just enough Italian dressing to coat the tortellini. Stir together well. Top with more Parmesan cheese if you want to get wild, mix and enjoy!

Notes

If you don’t have a griddle this recipe can easily be made inside on the stove. I would cook the onions, peppers, and kielbasa in a large skillet and boil the tortellini on the stove following the directions on the package. Drain the tortellini, combine everything in the skillet, and top with Italian dressing and Parmesan cheese.
