Creamy Spinach Artichoke White Beans

A cozy, creamy skillet dinner featuring white beans, Parmesan, and the savory flavor of spinach artichoke seasoning.

Ingredients
- 2 cans (15 oz each) cannellini beans, drained and rinsed
- 1 tbsp olive oil
- ½ cup vegetable or chicken broth
- ½ cup heavy cream
- ¼ cup grated Parmesan cheese
- 2 tsp Ain't No Joke It's Spinach Artichoke seasoning
- 1 tsp lemon juice
- Salt, to taste
- fresh parsley, Optional
- toasted sourdough, Optional
Directions
Heat the olive oil in a large skillet over medium-low heat.
Add the spinach artichoke seasoning and stir for approximately 30 seconds to gently release its aroma without burning the dried herbs.
Pour in the broth and add the drained beans. Stir to combine.
Simmer for 5 minutes, allowing the beans to absorb the seasoning.
Reduce the heat to low and stir in the heavy cream.
Add the Parmesan and stir until melted and the sauce begins to thicken.
Lightly mash a few beans with the back of a spoon to create a thicker, creamier consistency.
Stir in the lemon juice and add salt to taste.
Simmer for another 2–3 minutes. Serve warm with toasted sourdough and fresh parsley.
